For Large Family and Meal Prep

So In my home, we meal prep.

  1. It saves money.
  2. It provides fast food that is ready to heat and serve.
    • You have food to come home to and enjoy!
  3. You can make as much as you have room to store.
    • You will not waste food. That’s a big plus for me. We tend to have leftovers that no one wants to eat right away, so this helps by only cooking what is needed for each day. That’s 2 chicken thighs for each person. So I’ll prepare 3 pans, with 12 thighs in each pan!
  4. Its grab and go food.
  5. You control your portions for you and your children.
  6. You spend less time in the kitchen and more time with your family!
    • Who doesn’t love more cuddle time with their babies! They grow up so fast!
  7. It helps you plan your grocery list in advance.
    • Especially, if your job is demanding, or you work in ministry, or you are away from home most of the time.

There is so many, many other reasons why meal prepping is the best!

So lets get started!

Makes 12 Sandwiches, but you can double!

For these breakfast sandwiches, I used English muffins, but you can change that out to anything you like. Make it KETO, PALEO, anything. There was a time I even used whole wheat or white bread.


  • A package of 12 English muffins, or 24 slices of bread
  • A package of Sausage or bacon.
    • I used Jimmy Deans breakfast turkey sausage.
  • A dozen eggs of your choice.
  • 12 slices of cheese
    • Any kind you choose or your families favorite.
  • Spices for your eggs
    • Salt, pepper, garlic, onion, whatever taste good to you!


  1. On a large baking sheet, lay out wax paper or oil the pan well.
    • This will allow the eggs to come up fast and easy.
  2. In a large bowl, crack your eggs and season them to taste.
  3. Pour your eggs into the large prepared pan and back at 350 degrees until firm about 8-10 minutes.
    • If you like your eggs to be a little underdone so that when you reheat them they are firm, do so. As long as you can easily cut squares, or circles.
Poured into a wax papered pan, for easy lifting.
  1. Put your sheet of eggs in the fridge to chill a bit. Do not leave them out to cool. You want ALL fresh food here!
  2. Next, cook your meat.
    • I heated my sausage on the stove top with a little oil. Do not over cook!
    • If using bacon, do not cook hard.
  3. Next prepare your bread.
    • You have a choice of toasted bread or non-toasted bread.
    • I toasted my English muffins lightly in the oven with butter for 8 minutes.
    • Lay your bread out on a large clean surface, with each half exposed.
Lay it flat!
  1. Once your eggs are chilled, start cutting them into squares or circles. Make 12 even squares, or circles.
  2. Put a slice of egg on one side of each bread, next your meat, than your cheese slice.
    • I have two girls that do not like melted cheese. And since these sandwiches will be heated in the microwave or oven, I omitted that.
Stack it Up!

  1. Close your sandwiches up and wrap each one individually in wax paper or plastic wrap.
  2. Next, in a large FREEZER storage bag, stack each sandwich up without smashing them. So use as many as you need.
    • Only use freezer bags so your sandwiches don’t get freezer burned.
    • Don’t forget to LABEL each baggie!

That’s it! You just did a large breakfast sandwich meal prep.
