This is definitely not your typical banana muffin!

The taste is just out of this world once you add the orange glaze. Go hard and put orange zest into your batter (HEAVEN).

These muffins can be meal prepped, use a 24 cup cake pan to mass bake these. After you do the finishing steps, allow your muffins to cool off and wrap them in wax paper.

Store in the freezer for up to three months.

Iced Orange Banana Bread Muffiins
"Irresistibly delicious", describes these muffins just right! This was an experiment for me to see how the banana and orange flavors would mesh, but it became an instant hit. You'll have no idea until you make them yourself. With this easy recipe, you'll be licking your fingers before you know it!

  • 4-6 large Over ripe Bananas *Blacker the better
  • 2 large Eggs
  • 3/4 cup Applesauce *Makes muffins moist / can also replace some or all of the oil in equal parts
  • 1/2 cup Greek Yogurt *optional - gives the muffins density
  • 2/3 cup oil * can replace with equal amount of applesauce for healthier option
  • 2 tsp Vanilla *optional
  • 1 large Orange

Instructions
  1. Preheat oven to 425 degrees.
  2. Mix flour, baking soda, salt, cinnamon and/or pumpkin spice together in large bowl and set aside.
  3. In a separate medium bowl, mash bananas. Then, add in eggs, applesauce, yogurt, oil, vanilla, and mix together.
  4. Now add wet mixture into flour mixture and mix until all ingredients are wet. Cover with a clean towel for about ten minutes.
  5. Bake in Large muffin pan for 10 minutes at 425 degrees. Then lower temperature to 375 degrees for about 15-20 minutes.
  6. Zest orange in in measuring cup and juice it. Add in powdered sugar and mix. Finally cover muffins with glaze after muffins have set for 10 minutes. Now enjoy your delicious muffins!
