Ok, I’ll stop rhyming, but seriously, this meal can last two to three days depending on the size of your family. Now let’s start cooking!

Mexican Stuffed Burrito Pie

  1. Warm up your meat and refried beans. Combine them.
  2. Prepare two batches of tortillas liked above -or use store bought (or more depending on how much you want ESPECIALLY if you are meal prepping). Roll the dough onto a large cookie sheet, creating four long sheets all together. This is a cheat, that will allow you to move fast!
  3. Throw tortillas in the oven to pre-bake them. Then, in a extra large foil pan, begin to layer your burrito. We like to do this order: Tortilla, Bean/meat mix, salsa, cheese, until the pan is filled. The last layer should be cheese.
  4. Place pan in the oven for about 10 minutes or until cheese melts.
  5. Once the cheese melts, it's ALL done! Add salsa to taste Or use my homemade sour cream linked above!
Recipe Notes

When meal prepping this, consider how you will store it. 

I would let it chill overnight, then the next day, cut into squares, wrap in wax paper individually, store in the freezer bag.

This can last for three to four months in the freezer.
