This coffee cake is made with ingredients you probably already have in your pantry. A very easy Meal prep item that freeze's and defrost really well. ---Secret ingredient: pancake mix--If meal prepping, DOUBLE all ingredients! Or just enjoy today:)Preheat your oven to 375 degrees
Servings 12If sliced 1/2inch or 6 for 1 inch slices
Bread loaf pan, or a bundt pan, or a cupcake pan, or a large cake pan.
2 Medium sized bowls for mixing and one to prepare the streusel.
A large spoon, and a Fork.
2 CupsPancake MixYES!! This is what makes the cake fast and easy to prepare.
2/3Cups MilkYou can use water, but milk adds a richer taste!
1CupApplesauceMy secret tenderizer!
1/3CupPancake MixOr flour, I like that taste better.
1/3CupPacked Brown Sugar
2tbspButter or oil
First, oil your baking pans!
Next, Mix the Streusel ingredients together with a fork. Tossing it in the bowl with your fork until the ingredients come together.
Third, mix all of your cake ingredients together, until well blended.
Now, fill your pans, muffin cups, or bundt.
Spread the Streusel all over your cake. Next, take a knife and slice it through the batter, creating a zig zag. This will allow your cake to look pretty inside!
Bake at 350 degrees, for 18-22 minutes depending on your ovens heat range. Its done once its golden brown. (See Picture.)(Some ovens cook faster, some ovens cook slower!)
Allow your cake, or cakes to cool COMPLETELY before slicing them into 1/2 inches for 12 pieces, or 1 inch for 6 pieces. Next, Cut pieces of wax paper to go between each cake slice. No slice should touch while freezing. Label your bag, allow them to cool additionally over night in the fridge, than freeze the next day.If you made muffins, once they cool, pile them six or four (depending on the size) to a large gallon sized freezer bag. Allow to cool additionally over night in the fridge. Than freeze them the next day. Don't forget your bag label!
